alex.stanfield 3dbb4f616f test: [Scheduler] version ceiling/override replay + rollback coverage ...

Add cross-version replay and rollback coverage for the V1 scheduler version
ceiling/override, plus observability for the two silent clamp behaviors.

- Metrics: schedule_migration_deferred_by_version_ceiling and
  schedule_search_attribute_update_skipped_by_version_ceiling, with warn logs
  at the deferred-migration and skipped-search-attribute-upsert sites.
- replay_test.go: TestReplays runs every fixture under four ceiling/override
  configs; TestEveryVersionIsMapped asserts the newest version maps to a
  fixture that actually records it; version-ceiling compatibility fixtures.
- SchedulerWorkflowForReplay exposes ceiling/override to replay without
  widening the production API.
- Generation harness (tests/) with SCHEDULER_REPLAY_ACTIVE for behavior-rich
  fixtures; checked-in fixtures and reverse_replay.sh for the rollback peer.
